Welcome back to Anderson's SmokeShow! On today's episode I turn my grandmothers homemade Italian Meatball recipe into a 6lb MONSTER meatloaf! But we aren't stopping there, we are stuffing the meatloaf with fresh mozzarella cheese and wrapping it with thick cut bacon! If that doesn't sound great, we also smoked this stuffed and bacon wrapped meatloaf in my Pit Boss 5 Series Vertical Pellet Smoker! Pellet of Choice: Pit Boss Classic Blend (Pecan, Hickory, Mesquite) Recipe for a 1 pound meatloaf (We quadrupled this): - 1/2 lb Ground Beef - 1/2 lb Ground Pork - 1/2 cup Dry Bread Crumbs - 1/2 TBSP Salt - 1 Egg Beaten - 3 TBSP Grated Cheese - 1 Clove Garlic, Minced - 1 tsp Parsley, Minced - 2 TBSP Water (added as needed) Mix together well: Ground beef, ground pork, grated cheese, egg, garlic, and parsley. Slowly add in bread crumbs and continue mixing well. Add water 1 TBSP at a time as needed. We then laid out 2lbs of bacon and wrapped the meatloaf in it. See video for specific instructions. Pre-heat the smoker to 250F and smoked until the internal temperature reaches about 160F. This Italian meatloaf recipe versatile and simply delicious!
